Carrot, Coriander and Peanut Salad

Serves 3 - 4

1 Cup Bean Shoots

2 Spring Onions – sliced

½ Cup Peanuts – roasted and chopped

2 large Carrots – grated

1 x bunch coriander – roughly chopped

1 bunch mint – chopped

1 small red onion – thinly sliced

1 – 2 x birds eye chilli – finely chopped

½ Red Capsicum – thinly sliced

1 tsp salt
 
1tsp Cracked pepper

100ml Matchett’s Tyrant

Method

Toss all ingredients together. Garnish with chopped coriander, mint & chillies.  
Serve well chilled.
