Smoked Chicken and Avocado Salad

1 whole smoked chicken-portioned and sliced neatly
1 red onion-thinly sliced
2 avocados cut in half and fanned
1/2 cup sun dried tomatoes
Mixed lettuce eg. rocket, baby spinach, sorrel, cos, coral, red oak
Parsley-finely chopped
Matchett's The Goddess dressing

Method
Arrange lettuce on plates. Scatter sun dried tomatoes
and red onion over lettuce. Arrange avocado to one side of the palte and place chicken neatly in the center. Dizzle with Matchett's. "The Goddess" . Sprinkle with chopped parsley. Serve.
