BBQ Chicken with Garlic & Oregano

Cooking Time: Refrigerate 4 hrs / Cooking 15 mins

Serves: 4


1kg boneless chicken thigh
4 cloves garlic – chopped
½ Cup olive oil
2 lemons – sliced into rounds
3 Tbl fresh oregano - chopped
2 tsp fresh thyme – chopped
2 tsp fresh cracked pepper
1 tsp salt flakes
Matchett’s The Goddess salad dressing


Mix together all the above ingredients except for The Goddess, squeezing the lemon slices to release some of the juice into the marinade.
Set in a flat dish and cover.  Refrigerate for at least 4 hours.
Preheat BBQ or grill. Cook chicken on both sides until lightly golden.
Serve with a Greek style salad drizzled with Matchett’s The Goddess dressing.
*The chicken in this recipe can easily be substituted with octopus, pork or quail
